Easy Blueberry Cobbler with Blueberry Whipped Cream

This is such an easy recipe and fun to make with children, they love the surprise messy look at the end. Even better is the resulting cake,  ‘fit for a 'little prince or princess'. Great topped with blueberry whipped cream.

Layer 1: 2 cups blueberries  - juice of 1/2 lemon

Layer 2 : 3/4 c. sugar, 3 tbsp. butter, 1 c. sifted flour, 1 tsp. baking powder,
1/4 tsp. salt, 1/2 cup milk, 1 cup sugar

Layer 3: 1 tbsp. cornstarch,1 cup boiling water

Method:
Grease a 9x13 inch pan with butter or margarine and place berries as the bottom layer. Sprinkle lemon juice over berries.

Layer 2 -Cream together 3/4 cup sugar and butter with an electric mixer. Sift together flour, baking powder, and salt. Add milk alternately with flour mixture to creamed sugar and butter a little at a time to make the batter. Pour batter over berries.

Layer 3-Combine 1 cup sugar and cornstarch and sprinkle over batter. Now for the fun part... pour the 1 cup boiling water over whole cake. This batter barely covers the berries. When the water is poured over batter and berries, the whole thing looks like a total mess! Don't worry - just chuckle and place cake in oven and bake in preheated 375 degree oven for 1 hour. Serve warm to room temperature topped with blueberry whipped cream.

Blueberry Whipped Cream

1. Make the 'blue stuff' ( you can cheat and use blue food colouring if you like)

Take a handful of blueberries and place in a microwave with 1 tablespoon of sugar. Heat, just enough to cook blueberries slightly and make a blue syrup. Stir, and strain liquid and use as the 'blue stuff' to colour and flavour your whipped cream. (The nearest child gets to eat the leftover blueberries - cool first)

Place 1/2 cup of heavy whipping cream in the bowl of an electric mixer. Add sugar to taste, about 2 teaspoonsful. Start beating until frothy, drizzle in the blue stuff, only about 1 tablespoon or so should do it. More and it won't whip into a stiff cream. Whip until stiff, watch carefully so it doesn't turn into blueberry butter. If it does, though, just smile and say, ok, "I'll have this on toast".

Spoon blue whipped cream onto slices of  Blueberry Cobbler and enjoy those delicious mouthfuls! Sheer heaven.
